Cloves carry a full flavour punch of sweet, bitter, astringency, and a fair amount of heat. Ground cloves are a key component in two other spice blends: pumpkin spice and garam masala. Commonly used in South Asian dishes, North American pumpkin pie recipes, and countless barbecue sauces.
